Saute the roasted (grilled in the oven or on a fire) eggplants and peppers, peel and chop them very finely (you can use a blender).
Add a few tablespoons of chutney or fresh tomato to them. Press the garlic cloves and add them to the salad, then the very finely chopped leeks. Season the salad with oil, vinegar and salt to taste.
Place it in a suitable container and smooth out the top with a fork. Make a Christmas tree with the olives - to form the branches and trunk.
