Cut the leeks and saute them in oil. Add the feta cheese and spices. Grease a baking tray with oil and start to stack 2 phyllo pastry sheets at a time, then some stuffing. Repeat the process until out of ingredients.
Once you lay on the last phyllo pastry sheet, cover the pastry with its own protruding ends. Brush with egg and oil and bake at 392°F (200 °C) for about 30 minutes.
Cover the pastry with a damp cloth and leave it for 15 minutes to cool and soften. Then cut it into pieces and serve it.
