Beat the eggs, add the oil and yoghurt and mix. Add the crumbled feta cheese, baking powder and salt. Add flour until you get a cake batter.
Chop the carrot and finely chop one pepper. Add them to the dough along with the corn and mix. Fill the muffin cups up to the middle.
Place a piece of pepper on top of each and bake at 356°F (180 °C) until ready.
