Bread with Olive Oil, Turmeric and Olives

  • flour - 2 1/2 cups (600 g)
  • yeast - 1 tbsp (15 g) fresh
  • eggs - 1 (the yolk is for brushing)
  • olive oil - 4 tablespoon for the dough +2 tablespoons to spread
  • sugar - 1 tsp
  • vinegar - 1 tsp
  • salt - 1 tablespoon
  • yoghurt - 3 tablespoons
  • water - 1 cup (250 ml), cool
  • turmeric - 1 tsp
  • olives - 6 - 7, finely chopped
  • seeds

How to cook

Knead the dough : mix the yeast with the sugar and add a little water for them to rise. Then add the egg white, yoghurt, vinegar, olive oil and make a mixture. Mix the sifted flour with the salt.

Add a little of the first mixture to the salt/flour and knead a smooth and elastic dough (I hit the dough about 50 times on the counter until it became very fluffy and threadlike). Allow to rise for 1 hour and shape as desired.

I formed it like this: I divided it into 4 balls. I rolled out each ball into a sheet and put them on top of each other. Between them I smeared turmeric mixed with olive oil and sprinkled olives (don't smear the final sheet). Cut it into 8 triangles.

Make a small incision in each triangle. Take the top of the triangle, stick it through the incision from the bottom and pull it up. Once you've formed them, arrange in a rectangular oven dish.

Spread with the beaten yolk, sprinkle it with seeds. Leave it to rise for another 30 min. and bake until ready.
