Ingredients

  • pork - 26.5 lb (12 kg), streaky
  • bacon - 6.5 lb (3 kg)
  • leeks - 1, chopped
  • black pepper - 1 packet of powdered
  • paprika - 1 cup
  • savory - 1 - 2 cups
  • cayenne pepper - 1 tablespoon, coarsely grated
  • sugar - 6 1/5 cups (1.5 l)
  • salt - 12 tbsp
  • intestines - for filling

Preparation

Grind the meat and bacon on a coarse meat grinder. Mix the minced with all the spices, cover it tightly and leave to cool for a few days.

Mix it again each day. Fill the intestines with a sausage filler and dry them in a cool place for several days.

Then cleave the sausage in several places and grill it.
