Roll them up from the shorter side. Roll up two phyllo pastry sheets at a time and do this with all of the phyllo pastry. Smear the oven dish with oil and sprinkle with a little flour.
Starting from the center, arrange the rolled up phyllo pastries in a circle. Smear with a little egg yolk and a little butter. Bake in a preheated oven at 356°F (180 °C).
