Cut the meat into servings and if using legs, separate them into legs and thighs.
Wash the rice in a colander under running cold water until it turns clear, to get rid of the starch.
Put the rice in an oven dish, place the pieces of meat and sprinkle with the spices.
Pour in the olive oil and broth and stir.
Put the oven dish in a preheated 356°F (180 °C) oven for 1 hour.
Take it out and sprinkle with parsley.
