How to cook
Beat a smooth dough, cover it and leave it for 24 hours at room temperature. Before use, add the baking soda.
Put some of the dough in a heated thick-walled (or Teflon) pan without oil. Cover the pan and bake the pitas for 1 min. on moderate heat.
Bake on only one side. The cooked side must not darken, while the top side must remain slightly moist.
Take the pita out and leave it to cool. Use the rest of the dough to repeat this process. You're going to get about 14 small pitas, arrange them next to each other.
