"An exotic, healthy and very eye-catching appetizer worthy of a spot at your dining table."

Ingredients

  • tomatoes - 10, medium sized
  • amaranth - 2 cups, boiled ahead of time
  • oil - 3 tbsp
  • salt
  • black pepper
  • basil - to taste
  • parmesan - for grating

How to cook

Wash the tomatoes, cut their tops off and carefully carve out their insides.

Mix the amaranth with the other spices and stuff the tomatoes, put their tops back on and arrange them in an oiled tray.

Bake them in a moderate oven. Sprinkle the ready stuffed tomatoes with grated parmesan.

You can serve them either warm or cold.
