Boil the potatoes, let them cool, peel and dice them. Cut the ham into thin strips. Chop the garlic finely, dice the tomatoes.
Cut the pickles into strips, cut the chili pepper into very thin round slices.
Combine the potatoes with the ham and garlic, add the peas and chopped chili pepper and stir.
Add the salt, oil, pickles, carrots/tomatoes, peas, cayenne pepper and stir. Serve sprinkled with finely chopped parsley.
