Cut the well-washed mushrooms into pieces and the onions and garlic very finely. In a deep pot, heat 2 tbsp of the olive oil and braise the vegetables. Fry for about 4-5 min., then add the peas, tomato paste (diluted with a little water) and the kritharaki.
Stir the dish well, pour the cold water over it, season with the spices and bring to a boil. Boil 4-5 min. under a lid. Remove it from the stove, without removing the lid, and let it sit for at least 10 min. to stew.
If desired, sprinkle each portion with grated cheese before serving.
