How to cook
First, prepare the sauce. Chop the garlic finely and braise it in the olive oil. Pour in the flour and stir well. Cut the tomatoes into slices and add them along with the wine and bay leaves. Season with salt and pepper and boil about 10 min.
Take the bay leaves out and blend the mixture.
Cut the eel into pieces. Season with salt and black pepper. Roll the pieces in the flour and fry in the oil.
Pour the tomato sauce over the fried eel, sprinkle with parsley and serve.
