How to cook
Wash and peel the potatoes. Then dice them into suitably-sized cubes. Boil them for 10 min. in a pot with water, salt and a little butter.
Transfer the potatoes to a bowl, strain and cool.
In another bowl, whip the eggs with the salt, black pepper, then add the parmesan. Add the boiled potatoes and stir.
Pour the mixture into an oven dish with baking paper. Bake in a preheated 356°F (180 °C) oven for 20 min.
