Pour the milk, cream and honey in a pot. Heat them, without allowing them to boil. Add the gelatin (soaked in cold water ahead of time) and remove from the stove. Stir well so it gets absorbed and leave it to cool.
Prepare silicone muffin cups. Pour 1-2 tbsp of the peach mixture in each cup, leave them to harden in the fridge. Once they do, put a biscuit in each.
Top off with the cream you made earlier and return to the fridge to harden completely. Then take them out of the muffin cups and serve.
