Pour the olive oil in a deep pan, add the cleaned chili peppers and chopped onions and braise.
Once the vegetables soften, add the chopped garlic, cumin and paprika. Pour in the tomato sauce and 1 cup (250 ml) water.
Leave it on the stove about 15 min. on moderate heat. Season the tomato sauce with salt and black pepper.
Then, turn off the stove, add the eggs and put a lid on until the eggs are ready.
Put an egg in a plate, be careful so that it remains whole and add some tomato sauce. Sprinkle crumbled feta cheese on top and finely chopped parsley.
