How to cook
Clean and wash the mushrooms. Chop them and saute in the oil.
Season with salt and black pepper, then pour in a little hot water.
Transfer the mixture to a serving plate. Break the eggs and put them in salted boiling water with the vinegar.
Boil until they poach. Then strain them and arrange them on top of the mushrooms. Sprinkle with oil that's been braised with paprika.
