Cut the lamb meat into medium-sized pieces and pour enough water over them to cover the bottom of the oven dish with 1 finger width of water. Cut the stems of the lovage finely and add them to the lamb.
Season the meat with the spices. Pour oil on top and put the dish to bake in a preheated 392°F (200 °C) oven, while stirring the meat periodically.
Once the water from the oven dish evaporates and the meat starts to crisp, add the round slices of green onions and stir well. Bake another 10-15 min. Serve it warm with a suitable seasonal garnish and green salad.
