Clean the carrots and cut them into round slices. Peel the garlic cloves and cut them in 2.
Sprinkle with oil and wrap it closed. Repeat the process for the other pork shank. Put them in the oven to bake for about 1 hour and 15-20 min. You'll know the shanks are ready when the meat falls off the bone.
Serve with a piece of lemon.
