How to cook
Peel the small onions and add them to the meat, without cutting them. Clean the carrots and cut them into round slices. Put them in with the meat as well. Stick in a few bunches of fresh spearmint. Pour in about 2 cups water.
Cover the oven dish tightly with thick foil.
Bake the kid on a slow fire for about 3 hours. If cooking the meat on a wood-fired oven, the taste becomes irresistible.
The meat is ready once it falls freely off the bone.
