How to cook
Remove the okra's stems. Soak the okra in water, sprinkle them with salt and begin rubbing them with your hands so that the fuzzy part falls off, then rinse them thoroughly with cold water.
Braise the onions in the oil for 3-4 min. and to them add the peeled and diced tomatoes. Salt them.
After 5-6 min., add 1 tsp paprika, a pinch of salt and the okra, stir well and pour in water - enough so that the level is about 1 finger width above the okra.
Cook on low heat, about 30-40 min., so that it's left in just oil and finally sprinkle with the finely chopped parsley.
