Cut the zucchini into suitable slices, sprinkle them with salt and let them sit for 15-20 min. to release their juice.
Drain the ready zucchini and roll them in flour. Heat the oil and braise them until golden.
Drain onto baking paper. Heat about 1 cup oil and saute the finely chopped onions. Add the paprika and finely chopped and peeled tomatoes.
Cook until the sauce thickens. Add the sugar and savory and finely chopped garlic.
Pour the tomato sauce over the braised zucchini prior to serving.
