Clean and cut the carrots into strips. Heat a little olive oil, add 1 tbsp honey and put the carrots to caramelize a little. Add the cleaned and chopped mushrooms and cook briefly.
Put the marinated meat in a deep pot with a lid. Arrange the mushrooms and carrots around the meat. Smear with the butter, pour on the rest of the marinade, put the lid on and turn the oven on. Bake for about 40 min. after the oven heats up.
Remove the lid, pour in 1-2 tbsp white wine and bake to a golden crisp. Season the baked dish with ground black pepper. Serve warm.
