How to cook
Beat the yolks with the sugar and lemon rind with the mixer on high. In a pot, put the lemon juice, agar agar and stir well to prevent lumps from forming. Put it on the stove.
Leave it on the stove on low heat and once it's ready, add it to the yolk mixture.
Beat the cream to snow. Separately, whisk the egg whites to snow and carefully mix together with the cream and yolk mixture.
Distribute this into a suitable serving bowls and leave in the fridge overnight, then decorate with lemon slices.
