How to cook
Boil the chestnuts until ready and peel them. Puree them in a blender.
Bring the milk to a boil. Separate the yolk from the egg and beat it with the sugar, gradually add the milk to them.
Add the rum essence, vanilla sugar and gelatin, dissolved in 2 tsp water.
Pour the milk mixture over the chestnut puree and stir until you obtain a homogeneous mixture.
Add the cream, stir well and distribute into bowls. Decorate with whole chestnuts on top and grated chocolate.
