Stir the well cooled butter with the flour, cream and baking soda. Quickly knead a soft dough, then divide it into 3-4 balls and put them in the freezer for 90-120 min.
Roll out the chilled dough into a circle, cut 7-8 triangular pieces from it. Put 1 tsp of honey at the base of each triangle and roll them up.
Arrange the croissants with some space in between them in a pre-greased tray and bake in a preheated 356°F (180 °C) oven until ready.
