Combine the butter with the flour and knead until you get crumbs. Combine the yeast with the cream and a pinch of sugar, then add it to the flour without waiting for it to bubble. Add the salt, 392°F (200 °C) of the sugar and 5 yolks.
Knead a medium thick dough. Roll it out into a crust and put it in an oiled oven dish. Leave it for 30 min. to rise. Bake until golden in a moderate oven.
Smear the apricot jam over this cake layer, put the 5 beaten to snow egg whites on top, to which you've added the rest of the sugar and vanilla. At the very top, sprinkle with walnuts and put it for 5 min. in the oven.
