How to cook
Boil the potatoes in salted water. Peel and dice them. To them add the finely chopped onions, parsley, salt, oil and vinegar. Stir well and pour the mixture into a plate.
With moist hands, shape the salad into a fish. For scales, use sliced pickles and a carrot. For its tail use a bunch of parsley and for its eye - use an olive.
Serve the salad cooled. It makes for an excellent appetizer or garnish for the holidays.
