Wash the pears, peel them, clean them of their seeds and grate on a coarse grater. Cut each phyllo pastry sheet in half to obtain 6 smaller sheets for the rolls.
Put 1 of them on the counter and sprinkle it with melted butter. Put sliced pieces of Turkish delight at one end of the sheet. Sprinkle it with cinnamon to taste. Fold the edges of the sheet inward a little and roll it up. This is done to prevent the filling from spilling out during baking.
Make the other rolls the same way. Put them in an oven dish, covered with baking paper, which you've smeared with melted butter. Smear each roll with butter on top as well and put them to bake in a preheated 356°F (180 °C) oven until ready. Sprinkle the baked rolls lightly with vanilla sugar.
