Wash and dry the turkey ahead of time. Combine the soft butter with the thyme, savory, garlic, salt to taste, 1 tbsp grated orange rind, the soy sauce and a little lemon zest. Cover the flavored butter with aluminum foil and put it in the freezer until it hardens.
Carefully peel away the skin of the turkey with your hand and salt it there. Evenly distribute slices of the flavored butter as well.
Chop the onions into round slices and put them at the bottom of a deep clay pot, salt them and stir. Place the flavored turkey on top and pour on the juice of 1 orange, 1 lemon and sprinkle with black pepper grains.
Before covering with foil on top, arrange round slices of orange on top of the turkey. Bake the dish at 338°F (170 °C) for 4 hours.
You can serve the Baked Turkey with Oranges with mashed potatoes or a puree made of pressed onions and the sauce released during baking.
