Beat 1 egg, add 1 cup cool water, a little salt and 2 tbsp oil to it. Add flour, kneading until you get a medium-soft dough. Once the dough is kneaded, leave it to sit for 1 hour.
Then roll it out into a sheet 1/8 thick. Leave the rolled out sheet to dry a bit - about 15 min. Then take 3 forms of different diameters to cut out circles.
Once you've formed the circles, make several cuts with a knife on each one. To form the Cucurini, stick 3 different-sized circles with beaten egg yolk.
Make an indentation on the uppermost circle in the middle, then heat a generous amount of oil in a deep pan.
Once the oil is well heated, put the Cucurini with the smallest circle face-down in it. They crisp quickly, so be sure to be quick to flip them over with serving tongs. Once all Cucurini are fried, sprinkle them with powdered sugar and put a piece of strawberry from a jam in the middle of each.
