How to cook
Put the milk in a pot on the stove to come to a boil. Beat the egg yolks into foam, add the vanilla, coconut milk, flour and cocoa and beat well with a mixer.
Pour this mixture in a thin trickle to the milk, while stirring nonstop, and continue stirring until the cream thickens. Leave it to cool at room temperature. Beat the egg whites to snow with 1 cup sugar.
Caramelize the rest of the sugar and add it to the whites. Once both creams are at the same temperature, add the egg white cream to the milk cream, while beating with the mixer.
Distribute the prepared cream in suitable cups that you've moistened with water beforehand. Decorate with coconut flakes.
