How to cook
Wash the zucchini well and cut them into very thin round slices. Sprinkle them with salt and leave to sit about 20 min. to drain away the juice, then dry them well with paper towels. Roll them in flour.
Use a blender or chopper to blend the bread into crumbs. Combine them with the parmesan and add 1 pinch black pepper.
Beat the eggs well. Dip the floured zucchini slices in the eggs, roll them in the crumbs and fry in highly heated oil.
After frying, take them out onto paper towels to drain away the excess oil.
Eat with your favorite garlic sauce. Enjoy!
