Beat the eggs with a fork. Add the sugar and a pinch of salt. I always add salt to taste, to bring out the cookies' aroma. Grind the walnuts in a chopper and add to the mixture. Or grate them bit more coarsely if you like.
Knead this mixture with the einkorn flour. Add 1 1/2 cups flour to begin with. If it seems too runny, add more.
Scoop from the mixture with a spoon and put the thick and sticky mixture onto baking paper. Make sure there's space between them, otherwise they'll stick.
