Wash and peel the lime. Chop the rind and put it in a bowl. Add the remaining ingredients for the pancakes and mash them together. Cover the mixture and leave it for 20 min.
Fry 15 pancakes in a pan.
For the cream, beat the sugar, eggs and juice with a mixer. Put them on very low heat, stir until thickened and remove from the stove. Wait for it to cool a bit, add the butter and beat again.
Put a pancake in a cake form and smear it with 2 tbsp cream.
Repeat this process until out of ingredients. Finish off with a pancake that you've cut into strips.
Put the cake in a preheated 356°F (180 °C) oven for 15 min.
Take it out of the form once it's cooled and sprinkle with powdered sugar.
Optionally, serve with ice cream!
