Make a marinade for the meat from the oil and spices.
Make cuts with a knife along the meat and season with the marinade. Leave the meat for 30 min. to take in the aromas.
Clean the vegetables and cut them into coarse cubes. Place them in a clay pot and season with a little salt and black pepper. Stir well and place the meat with the marinade on top.
Pour in the wine and 1 1/5 cups (300 ml) water.
Put the clay pot in a cold oven. Heat it to 392°F (200 °C) and bake until the meat is ready.
Serve with chopped parsley.
