Cut the chicken into coarse pieces, put them in a pot with water and boil for 30 min. Drain them well, save the broth.
Clean the onions, leeks and chop them finely. Cut the roasted peppers (cleaned) into strips. Heat oil in a pan, saute the onions, leeks, mushrooms sprinkled with salt, black pepper, oregano and finely chopped parsley.
Once the liquid boils off, add the cut peppers, paprika, stir and pour in the red wine and a cup of the broth in which you had boiled the chicken.
Pour the vegetable mixture in a suitable oven dish, arrange the chicken meat on top.
Bake in a preheated 356°F (180 °C) oven until the meat is ready.
Pour in a cup of wine and serve!
