Mix the ingredients in the order listed and gradually knead a smooth dough. Knead until it's well formed.
Mix the feta with the chopped parsley.
Divide the dough into 18 balls. Stretch out each one, put 1 tsp of filling in the middle of each and fold the edges. Carefully roll it out into a circle 1/4" (5 mm) thick.
Heat generous amounts of oil and fry the flat pitas on both sides.
