How to cook
Put the water to come to a boil with the lemon zest (grate only the yellow part of the rind, not the white) and a pinch of salt.
Put the washed rice in the boiling water and lower the stove. Boil until the rice absorbs the water and nearly softens. Then, pour in the milk.
Continue boiling while stirring nonstop.
Once the rice is ready (well boiled), sweeten it with 3-4 tbsp sugar, or to taste.
Add the fresh yolk, which you've beaten with 2-3 tbsp water.
Stir the rice several times and remove from the stove.
While still warm, pour the rice into bowls or cups and serve sprinkled with cinnamon.
