How to cook
Pick out a piece of meat without any bones. I personally prefer the fattier body parts, like the neck or breast, because the meat doesn't dry out as much and is juicier. Cut it up and place it in a pot with water on the stove. Boil the meat for 30 min., removing the foam periodically.
Wash the rice in a strainer under cold running water until the water running down from it turns clear.
Clean the onions and chop them finely. Heat the olive oil in a pan, add the onions. Braise until softened, add the rice and fry a few min. until the rice turns glassy. Season with salt, black pepper, turmeric and thyme. Remove from the stove.
Drain the pieces of meat and put them in an oven dish. Add the rice on top, pour in vegetable broth and stir.
Heat the oven to 356°F (180 °C) and put the oven dish in i t. Bake about 25 min. until the rice is cooked.
