How to cook
Peel the tomatoes and put them to fry in a little oil. Add the chopped garlic, parsley, salt and stir.
Once the liquid has nearly evaporated, transfer the mixture to an oven dish.
Make several cuts along the sausages and arrange them amid the tomatoes.
Put the dish in a preheated 392°F (200 °C) oven. Shortly before the sausages crisp, take it out and break the eggs in.
Return to the oven until the eggs are ready.
