Tender Lamb Roast with Beer

  • lamb - about 3.5 lb (1.5 kg) of meat, clod or leg
  • beer - 1 1/3 cups (330 ml)
  • spearmint - 1 tsp
  • lovage - 1 tsp
  • salt
  • black pepper
  • paprika - 1 tbsp
  • olive oil - 3 tbsp
  • thyme - 1 tsp
  • broth - 2/5 cup (100 ml)


Wash the meat and put it in an oven dish.

Mix the olive oil with the spices in a bowl, stir. Smear the meat generously with this mixture on all sides, rubbing it in.

Pour the beer and broth in around the meat and cover the oven dish with aluminum foil.

Bake the lamb in a preheated 320°F (160 °C) oven for about 3 hours.

Remove the foil and finish baking to a golden brown crust, turning the oven up to 356°F (180 °C) for about 20 min.

If the meat is left in just oil, pour in a little vegetable broth.
