Quick and Tasty Phyllo Pastries

  • phyllo pastry - 1 packet, sheets
  • feta cheese - 3.5 oz (100 g)
  • cheese - 2 oz (50 g)
  • eggs - 2


Beat the eggs in a bowl and set them aside. Crumble the feta cheese in a bowl and leave it aside.

Grate the cheese and leave it aside as well. Only open the packet of phyllo pastry sheets once you've prepared everything, so they don't dry out.

Smear a sheet with the egg mixture, sprinkle with feta and add some grated cheese. Take 2-3 sheets together, fold a 1 1/4″ (3 cm) border along 2 opposite sides, then repeat for the other 2 sides. Now grab it and fold it in half. What you end up with is a rectangle. Lift the edge carefully along its length and smear with egg so it doesn't stick.

Place it in an oven dish, laid out with baking paper ahead of time. Smear with egg on top and sprinkle with feta and cheese again. Repeat for the rest of the sheets. Bake in a preheated 356°F (180 °C) oven to a nice crisp.

Quick, easy and tasty. Perhaps the easiest snack I`ve ever made. Enjoy!
