Cut out a hole in the middle of each bread slice using a glass. Put the bread slices to toast on both sides in a grill pan.
Arrange them in an oiled oven dish and pour a light trickle of olive oil over each.
Break an egg into each hole. Put the sandwiches to grill for about 15 min. or until ready in a preheated 392°F (200 °C) oven.
Upon serving, sprinkle with black pepper and spice mix.
