How to cook
Pour plenty of oil in a large pan to heat up.
Chop the peppers, eggplants, onions and put them to fry, while stirring periodically.
In the meantime, peel the tomatoes, cut part of them, grate the rest. Chop the zucchini as well.
Once the veggies in the pan have braised, add the zucchini and tomatoes.
Chop the garlic, parsley and put them in the dish.
Leave the dish to simmer until the water evaporates.
