Season the meat with the spices, leave it to sit in the marinade for about an hour.
Then make incisions with a thin knife and stick the garlic and carrots in them.
Put them in an oven dish, pour in oil and a little wine. Cover with foil and bake.
Once it's nearly ready, remove the foil and crisp. Serve with mashed potatoes and a light sauce for baked meat, or even with a mushroom sauce.
