Duck with Sauerkraut

  • duck - 1
  • sauerkraut - 1 medium - sized cabbage head
  • rice - 1/2 cup
  • paprika
  • salt
  • oil


Chop the sauerkraut finely, saute it in a little oil with 1 tbsp paprika. Let it simmer for 20 min. or so, then add the rice and 2 cups water. Once the rice swells, remove it from the stove.

Transfer the sauerkraut to a baking tray. Pour in 1 cup water.

Rub the cleaned duck with salt and paprika, then put it in the tray with the sauerkraut. Cover with foil and bake at 392°F (200 °C) in the oven with the fan on for about 1 hour.

Toward the end of baking, remove the foil, check whether the duck is fully baked. If it is, let it crisp just a little bit more, until the skin gains a golden tan.
