Wash and roast the peppers. Put them in a plastic bag to smother. Peel, salt and roll them in flour.
Beat the eggs well. To them add the flour, crumbled feta cheese and grated cheese. Add a little salt and black pepper. You can also add finely chopped parsley.
Arrange some of the peppers in a buttered oven dish. Pour on half the mixture. Arrange the rest of the peppers on top and pour in the rest of the mixture. Sprinkle with the chopped olives and cherry tomatoes.
Bake at 392°F (200 °C) for about 35-40 min. or until nicely cooked.
