How to cook
Chop the onion finely, the peppers into long strips and braise them until softened. Next, add the peeled and diced tomato, after about 2 min. add the finely chopped spinach too.
Leave on the stove for 1 more min., then transfer to a small pot or glass oven dish with baking paper. Pour in the vegetables on top, press well with a spoon to even them out.
Then, press with the spoon in 2 spots to make indentations. Break an egg into each. Put the dish in the oven for about 5-7 min. (depending on how you like your eggs).
