Chop the onions and braise them. Add the chopped carrot and zucchini. After a few min., add the rice and finally the finely chopped tomato and spinach.
Pour the mixture into a suitable, deep oven dish. Pour in about 2 4/5 cups (650 ml) water and add the spices. Put the dish in the oven at 428°F (220 °C) for 30 min.
Take it out, arrange the diced tomato and olives on top. Return to the oven to bake for another 10-15 min.
