Peel the potatoes, cut them down the middle lengthwise and put them in a deep bowl with cold water.
Once peeled, mix all of the dry spices in a small container, excluding the sesame seeds. The quantities of spices are to taste.
Drain the water out from the potatoes. In its place, pour in about 3/4 cup olive oil, sprinkle with the mixed spices.
Toss the potatoes to spread the spices around and leave them for 2-3 min. Lay out the tray you intend to bake the potatoes in with baking paper.
On top, arrange the halved potatoes next to one another - it's not a problem if they're touching. Sprinkle each potato with some sesame seeds. Bake until ready in a preheated 428°F (220 °C) oven.
